Every year when the Peppertree Shiraz is bottled Mitchell of Clare reserve a few barrels of the most full bodied tannic material for their sparkling wine. The reserve wine is given another 2 - 3 years in barrel. The blend is then made from all the reserved vintages which now date back to the 1989 vintage. Then aim of this blending is to come up with a base wine showing as much complexity and maturity as possible. After blending the wine is bottle fermented and aged on lees for around 12 months, disgorged and topped with a little Shiraz ‘vintage port’ that was made in 1982.
